This recipe is easy to make and always a favorite with the family
Fish fillets x 6
Flour Plain good handful
1 egg beaten
breadcrumbs about 1 cup
grated parmesan cheese about 3/4 cup
Oil to your choice
I use grapeseed or rice oil
Lemon Thyme Butter
approx 60 gr
grated lemon rind
chopped fresh thyme or lemon thyme
Pat your fish dry
Comibine the flour and paprika and pepper and dust the fish fillets with that
Dip each fillet into the egg, and then coat with the crumbs and cheese
I like to put it in the fridge for about 15 min
Heat oil and fry fish over medium heat for about 3-4 min until each side is cooked
To make lemon thyme butter
heat butter and lemon rind and juice and thyme in either microwave or on stove till butter melts serve drizzled over fish.
Serve with steamed vegetables in season and sweet potato
Riesling, Pinot Noir and Rose are the best wines to pair with Crusted Fish.
