Walnut Banana Muffins


Walnut Banana Muffins

Muffins are light and healthy and food for the brains.

Serves 12

Ingredients

  • 12 muffin paper cups
  • 12 holes muffin pan
  • 1 cup walnuts
  • Ingredients 1
  • 2 large eggs (70gms each)
  • ⅔ cup brown sugar
  • Ingredients 2
  • 1 cup mashed bananas
  • 1 cup buttermilk
  • ¼ cup olive oil
  • 1 teaspoon vanilla extract
  • Ingredients 3
  • 1 ¼ cup plain flour
  • 1½ cup wholemeal flour
  • 1½ teaspoon baking powder
  • ½ teaspoon bi-carbonate of soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Method

  1. Preheat oven to 200C
  2. Whisk Ingredients 1 until smooth.
  3. Add and whisk Ingredients 2.
  4. Combine Ingredients 3 in a large bowl.
  5. Make a well in the centre of dry ingredients.
  6. Add wet ingredients, stir and mix till just combine.
  7. Do not overmix.
  8. Use an ice-cream scoop for even distribution of muffin batter.
  9. Scoop batter into muffin cups.
  10. Top each muffin with 1 or 2 walnuts.
  11. Bake muffins for 15 - 25 minutes.
  12. Cool cooked muffins on cake rack for 5 minutes.

Notes & Tips

Please do not overmix the batter. Homemade buttermilk: Mix 1 tablespoon apple cider vinegar into 1 cup of milk. Let stand for 15 minutes. You can sprinkle extra chopped walnuts or any nuts of your choice on muffins before baking. OR You can sprinkle cinnamon sugar on muffins before baking.
