Walnut and Banana Cake in Bundt Pan

The combination of naval orange, bananas and walnuts - yummy, yummy!!

Serves 6

Ingredients

  • Bundt pan or 22 cm baking pan
  • Ingredients 1
  • 1 large navel orange - cut into segments including skin
  • 2 bananas
  • ¾ cup sugar
  • Ingredients 2
  • 2 cups self raising flour
  • 3 eggs
  • 190 g butter - at room temperature
  • 2 tablespoons of olive oil
  • Ingredients 3
  • ½ cup walnuts
  • 2 ripe bananas - extra - slice on a slant
  • Olive oil spray - to oil bundt pan

Method

  1. Preheat oven to 180C
  2. Grease bundt pan with olive oil spray- set aside
  3. In a food processor
  4. Process orange, bananas and sugar until finely chopped.
  5. Add Ingredients 2 and process until just combined
  6. Spread ½ of mixture evenly onto the greased bundt pan
  7. Layer ½ of sliced bananas and ½ of walnuts
  8. Top up with the remaining mixture
  9. Layer the remaining sliced bananas and walnuts on top of mixture
  10. Bake in a moderate oven 180C for about 45 minutes or until cooked when tested.
  11. Stand cake in bundt pan for 5 minutes before turning out onto a wire rack to cool.

Notes & Tips

This is a very moist cake. Do not process the ingredients too much. Maximum processing time is 8 mins. Olive oil can be used instead of butter.
