Swiss Roll


Serves 2

Ingredients

  • 3 eggs, separated
  • 1/2 cup castor sugar
  • 3/4 cup Self Raising Flour
  • 2 Tablespoons hot milk
  • Castor Sugar, extra
  • 1/2 cup jam, warmed

Method

  1. Grease swiss roll tin and line base and sides with greaseproof paper.
  2. Beat egg whites in a small bowl with electric mixer until soft peaks form.
  3. Gradually add sugar, beating until dissolved between additions.
  4. Add yolks one at a time, beating until think and light.
  5. Fold in sifted flour and milk.
  6. Pour into prepared pan and bake at 200 degrees celcius for eight minutes.
  7. Place sheet approx the same size as the sponge on bench, sprinkle lightly with castor sugar.
  8. Turn out sponge when cooked and peel away lining.
  9. Cut off crisp edge along sides.
  10. Spread sponge evenly with jam and roll from the short side with the help of the paper.
  11. Cool on wired rack.
