Orange Cake


a very sweet citrus cake that goes well in summer at a picnic

Serves 6

Ingredients

  • 180g butter
  • 250g castor sugar
  • 3 eggs
  • 185g Self Raising flour
  • 60g Plain Flour
  • 1 Orange, juiced, supplemented with milk to produce 1/2 cup of liquid
  • 1/2 teaspoon orange rind

Method

  1. preheat oven to 160 degrees celcius
  2. cream butter and sugar with electric beaters
  3. gradually add eggs one at a time
  4. fold in flour
  5. add orange juice and wait until totally absorbed before assing milk
  6. bake for 45 minutes
  7. ice when cool with a simple icing.

Notes & Tips

When I made this cake, I found that you dont want an over-powering icing on top, so my simple recipe was just orange juice and icing sugar, a simple thin "glaze" like icing.
