Wholemeal Vegetable Pasta

Lucky Ocean cooks a quick and simple pasta for Anna Gare.

Ingredients

  • 1 packet wholemeal pasta shells
  • 1 head broccoli, cut into florets
  • 2 tablespoons olive oil
  • 2 leeks, finely sliced
  • 8 anchovy fillets, chopped and some of the anchovy oil
  • 1 red chilli, finely chopped
  • 8 mushroom, sliced
  • 1 red capsicum, roughly chopped
  • 2 tomatoes , roughly chopped
  • 4 tablespoons fresh oregano, chopped
  • 200g fetta, cubed
  • salt and pepper to taste
  • Grated parmesan and a squeeze of lemon to serve

Method

  1. In a large pot bring water to the boil.
  2. Cook pasta shells for 9 minutes approx.
  3. The add broccoli florets to pasta and cook til both are cooked.
  4. Heat oil in wok and sauté leek until soft.
  5. Add anchovies, chilli, red capsicum and mushrooms.
  6. Cook for 2 minutes, add tomatoes.
  7. Add oregano, fetta and half a cup of pasta water.
  8. Strain pasta and broccoli add to wok and stir in.
  9. Season to taste and serve with grated parmesan and a squeeze of lemon

    Wow, how delicious. The only thing I added was lemon oil, instead of plain. And, put half of the feta cheese in first, mixed, then half again so it wasn't so softened/melted. But, still absolutely delightful. Thanks.
