Tequilla Tortillas

Ingredients

  • 500g raw prawn flesh
  • 2 avocados
  • 2 tablespoons olive oil
  • 1 small red onion, sliced lengthwise
  • 1 yellow and 1 green capsicum, sliced into lengths
  • 1 teaspoon garlic, finely chopped
  • A good lug of decent gold tequila
  • Half a teaspoon smoked paprika
  • 1 bunch fresh coriander, chopped
  • 6 tortillas
  • 3 fresh limes
  • sour cream
  • salt and pepper to taste
  • Sriracha hot chilli sauce

Method

  1. Cube avocados and toss in salt and juice of half a lime. Set aside.
  2. Heat oil in frypan.
  3. Fry onions and garlic till translucent then add capsicum and fry for 2 minutes.
  4. Add prawns and continue to fry.
  5. Stir in paprika, salt and pepper.
  6. When prawns are almost cooked add a splash in tequila and flambé.
  7. Heat tortillas on grill plate until heated through.

Assemble Tortillas

  1. Spoon avocado on tortilla, then prawn mixture, top with sour cream and coriander, a squeeze of lime juice and chilli sauce.
  2. Fold, roll up and eat.
