Coffee Cake with Cinnamon Coffee Butter Cream.

This is just a good basic butter cake with a caramel/coffee flavour. I used coffee flavoured milk in the icing to get a delicate hint of coffee without it being overpowering - and so you don't start buzzing after a piece or two.....

Serves 8

Ingredients

  • 125g butter - chopped and at room temp.
  • 2 tsp vanilla extract
  • 150g dark brown sugar.
  • 2 eggs.
  • 150g self raising flour.
  • 30g custard powder.
  • 3 tsp instant coffee powder.
  • 130ml milk.
  • butter cream:
  • 125 g butter - chopped and very soft.
  • 240g icing sugar mixture.
  • 2 tbsp coffee flavoured milk (dare or moove etc)
  • 1/2 tsp cinnamon.
  • Shaved chocolate.

Method

  1. Turn oven on to 180 C
  2. Grease and line 2 sandwich tins.
  3. Put all the cake ingredients in a mixing bowl.
  4. Beat on low speed til combined.
  5. Beat on medium speed til changed in colour.
  6. Spread into prepared pans and bake 30 - 35 mins.
  7. Transfer to wire rack to cool.
  8. Icing:
  9. Beat butter with electric mixer til it turns very pale.
  10. Add sifted icing sugar in batches.
  11. Add the milk and then the cinnamon.
  12. Beat another minute so it really goes fluffy.
  13. Top one layer with half the icing, put the other layer ontop and spread with remaining icing.
  14. Shave chocolate ontop of cake

Notes & Tips

Really beating the butter for the icing will give you a soft, fluffy result because you're incorporating lots of air into it.
