Chicken Parmigiana

My kids love my easy Parmigiana recipe. Very easy, not full of spices that kids dont like. They can even help !!



  • 1.

    Cut each Chicken breast in half. Pound each piece untill thin.

  • 2.

    Cut off any traces of fat.

  • 3.

    Place beaten eggs in a bowl, crumbs in another.

  • 4.

    Place tomatoes, oregano, basil and dill in a bowl and mix though,

  • 5.

    Cut off fat around bacon rashers and place bacon on top of chicken. Very lightly pound together till bacon stays on when lifted.

  • 6.

    Dip chicken into egg, sprinkle over salt and pepper, then dip into crumbs.

  • 7.

    Place onto a heated oven tray, and cook for 5-10 minutes each side. When browned, pour tomato mixture over each Parmigiana, sprinkle with Mozzarella cheese. Cook untill cheese is melted

  • 8.

    Serve with Salad and chips/ Vegies...

Ok, thank you. I'm remaking it now so I'll try cooking it for a little longer.
I used the rounded end of a chopstick to make the holes. Now you've said that I think that may have been the problem.

This sound yummy and easy .. I liked the idea of adding Bacon layer..
