Gino’s Gamberi Linguini

Serves 2

Ingredients

  • ¼ cup olive oil
  • 10 tiger prawns, shelled and cleaned with tails on.
  • 1 heaped tablespoon garlic, minced
  • 1 tablespoon chilli, minced
  • 2 tomatoes , diced
  • ½ cup white wine
  • 2 big handfuls washed baby spinach
  • 2 tablespoons butter
  • 2 tablespoons flat leaf parsley
  • ½ pkt linguini
  • Ladle of spaghetti water
  • salt and pepper

Method

  1. Prep ingredients and have pasta five minutes away from being ready when you start the sauce.
  2. Put olive oil, prawns, garlic and chilli in hot wok toss for 2 mins.
  3. Add tomatoes and white wine, cook for a further minute.
  4. Add spinach, butter, parsley and spaghetti water and toss.
  5. Add drained pasta and serve.

    Just made this and was a huge hit! Only thing I added was some chopped chorizo with the prawns, which I think really added to it and will continue to do this in the future. Finished with some shaved parmasen and cracked pepper. Beautiful, and only took 10 mins!

    Quick, easy and yummy. I didn't realise it was so quick to cook and be ready and probably allowed the juices to dry up too much so added a dash of cream which was nice too. Great recipe!

    Stunning. EVERYONE liked this , which is almost a miracle! The simple sauce has a wonderful delicate flavour, that doesn't overwhelm the pasta. Being a family who usually makes heavy tomato based sauces (bolognaise, neopolitana), this was a big change and a huge hit. The kids even ate the spinach (after some prompting). As my 8 year old so humourously complained after I encouraged her to try the spinach in a forkful of pasta, "But it doesn't even taste like vegetables! So why do I have to eat it!". We have printed this and pasted it in the sacred "Familiy Favourites " book - the highest praise there can be in our household as every member has to agree before it can be pasted in (apart from spaghetti bolognaise and fettincini carbonara, most of the other entries are sweets and confectionary - toffee apples and mini meringues!). Try this!
