Lisa's Savoury Muffins


Lisa's Savoury Muffins

These came about after my neighbour kindly bought me one of hers. I have been messing with the ingredients ever since hoping to make some that are nice also and came up with these. They are nice with a hot cup of tea in the afternoon maybe with some butter spread in them.

Ingredients

  • 2 Cups self raising flour
  • 1½ tsp baking powder
  • ¼ tsp salt
  • ½ tsp pepper
  • 2 tsp ground cumin
  • ½ tsp ground chilli
  • 1 tsp dried parsley flakes
  • 1 clove of garlic, freshly crushed
  • 2 sprigs spring onion, finely chopped
  • ¾ Cup vegetable oil
  • 1 Cup milk
  • 2 Eggs lightly beaten
  • 1 small carrot, grated
  • ¾ Cup parmesan cheese, grated

Method

  1. Preheat oven to 190C and line a 12 hole muffine pan with liners.
  2. Sift flour, baking powder, salt, pepper together then gently mix in the rest of spices.
  3. In a seperate bowl lightly beat the eggs, add to this the milk, oil, cheese and garlic.
  4. Combine the wet to the dry and add remaining ingredients until is a nice consistency.
  5. If too thick add some small amount of milk.
  6. Bake for 15 to 20 minutes until a skewer inserted into the biggest one comes out clean.
  7. Store in an airtight container.

Notes & Tips

These freeze well if you want to make a double batch so you always have something fast on hand.
