Baked Maltese Spaghetti


Baked Maltese Spaghetti

I found this recipe in a magazine a couple of years ago and my family love it so I was compelled to share it with you. It is not for anyone on a diet though.

Serves 4 to 6

Ingredients

  • Olive oil to fry
  • 1 Large onion, chopped finely
  • 2 Garlic cloves, freshly crushed
  • 600G lean minced beef
  • 2 Tbs Curry powder
  • large jar passata
  • 500g Dried spaghetti cooked by packed instructions
  • 500g Grated cheddar cheese
  • 100g Grated parmesan cheese
  • 4 Large Eggs lightly beaten

Method

  1. Preheat oven to 180C and grease a good sized deep baking dish.
  2. Fry onion, garlic in the olive oil for 5 mins until softened, Add mince and curry then brown for 10 minutes stirring to break up lumps. Add passata and simmer 10 minutes.
  3. Meanwhile boil spaghetti, drain and return to the pan. Add beef and toss well to combine.
  4. Combine the cheeses and set aside 100g of it for the topping.
  5. Mix through cheese with the mince mixture and the eggs and pour into baking dish. Top with the extra cheese and bake for 30 minutes covered with foil.
  6. Remove foil then bake for 15 minutes until cheese is golden and bubbling.
  7. Serve with a crisp fresh salad of choice

    I was surprised to see the receipe of Baked Maltese Spaghetti cooked in that way! I am Maltese and I have never had it that way. I will try it and let you know. Cheers Myriam
