Not your usual sticky chicken

My husband saw I was so tired last week and said he would cook. He made this from himself and it was wonderful. I like to make sure there's some sauce left and not let it redue to oils at the end.

Serves 4 to 6

Ingredients

  • 12 chicken drumsticks
  • 5 large potatoes , cut into large rough chunks
  • 3 medium onions, diced medium
  • 1 tbs garlic, crushed
  • 1 tbs ginger, freshly grated
  • ¼ cup ( not quite full ) sesame oil
  • ¼ cup olive oil
  • Juice of half a lemon
  • 1 good sized tsp salt

Method

  1. Preheat oven to 180C and layer onions into a large non stick baking tray,then spread out potato pieces and top with the chicken. Try not to let the chicken overlap.
  2. Mix together the remaining ingredients and pour evenly over entire dish. Cover with foil and bake for 30 minutes.
  3. Remove foil and turn chicken not disturbing the other ingredients, Return foil back on and place back in oven a further 30 minutes.
  4. Remove foil again and turn chicken then baste potatoes and chicken with the sauces and return to oven uncovered.
  5. Bake until sauce has reduced to a thick consistancy and chicken is thoroughly cooked through. Then serve immediately

Notes & Tips

We served this with freshly baked bread. It was delicious just to mop up the sauces with the bread and didn't feel we needed to add anything else to complete the meal except a nice cold drink.

    mmmmm yum i'll definitely try that recipe of yours. Chicken and thyme are wonderful partners yummy :) Especially when you tie it up with some lovely fresh bread yum yum

    i love to mop up sauces with braed.. there's this "Chicken with olive oil& thyme" recipe which is u can say a traditonal recipe back there in Jordan ( i posted it already), i also just LOVE to mop up the sause with fresh baked bread .. yummy yummy yummy ...
