Foolproof Impossible Pie

In case no one knows what an impossible pie is. It's a lovely dessert where you put all your ingredients wet into a greased baking dish and almost impossibly it seems it comes out in 3 different layers. The bottom becomes pastry like because the flour and butter sink to the bottom, the centre becomes a custardy delight and the top is slightly golden and crunchy from the coconut and the flaked almonds. ( this was made middle of the night so the photo is quite horrible, please forgive me )

Serves 8

Ingredients

  • ½ Cup plain flour
  • 1 Cup Caster Sugar
  • ¾ Cup Desiccated Coconut
  • 4 Eggs
  • 1 Tsp Vanilla Extract
  • 125 Grams Butter, Melted
  • ½ Cup Flaked Almonds
  • 2 Cups whole milk

Method

  1. Preheat oven to 180C and grease a deep 24cm pie dish well.
  2. Combine the sifted flour, sugar, coconut, eggs, extract, butter and half of the nuts in a large bowl. Gradually add the milk stirring until well combined. Pour into your prepared dish and bake for 35 minutes.
  3. Remove pie from the oven and sprinkle over the rest of the nuts, bake a further 10 minutes.
  4. Serve with cream or vanilla ice-cream

Notes & Tips

Resist the temptation and enjoy this hot from the oven or wait until it's cold. It's delightful either way. Store in the refrigerator after cooling

    Oh yours sounds wonderful. It's definitely going to be next on my list of desserts. I'll try yours and tell you too :P Really any excuse to eat something delicious is good enough for me ;) lol

    I definitely should try it .. it's like a recipe i just submitted called "Odret Aader" , means "by God's well".. cz also u pour the batters in the baking tray, and while baking layers seperate so u'll end up having a caramel sugar layer,cream caramel layer and a cake layer. I'll try this one and let u know as soon as possible ;-) thanks dear!
