Fried Tomatoes with Garlic& Olive Oil

This traditional dish is AMAZINGLY tasty. It is usually served in the morning for breakfast or as a light supper, maybe next to a plate of Omelette, some French fries, and also some white cheese, and don’t forget the flat Arabic bread or Pita bread. It’s the perfect meal.

Serves 2 to 3

Ingredients

  • 5 medium size red tomatoes , cut into halves
  • 5 tbsp extra virgin olive oil (or enough to cover bottom of the frying pan)
  • 1 medium bell pepper, largely diced
  • 1 green jalapeno, whole (optional)
  • 5 garlic gloves, crushed or grated
  • ¼ tsp black pepper+ ½ tsp paprika+ 1 ½ tsp dried mint
  • Slat to season (about ½ tsp)

Method

  1. In a medium non-stick pan, over low heat, add olive oil and arrange tomatoes halves, cut side up.
  2. Arrange bell pepper and jalapeno (whole) pieces in between tomatoes
  3. Sprinkle tomatoes with crushed garlic, salt, black Pepper, paprika and dried Mint.
  4. Continue frying tomatoes over low heat till golden on bottom, for about 5 minutes more. Cover and continue cooking over low heat for another 20 minutes.
  5. Un-cover, and carefully flip tomatoes, cut side down. Cover and continue cooking for another 10 minutes. If liquids dry while cooking, add just 1-2 tbsp on sides of the pan. Cook till cut side is golden as well.
  6. Transfer to serving plate, cut side up, and drizzle with the sauce in the pan.
  7. Cut and eat with flat Arabic bread or Pita bread using finger tips (holding a bite-size piece of bread) to pick tomato bites, and enjoy!

      Hi Roland9.. This is one my favorite foods ever! and it's one of our very traditional Palestinian breakfast or dinner's plates, served with omelette or scrambled eggs, some french fries, mmmm emmmm, soooo yummy! ;-)

    My husband would love this. I am an egg girl for breakfast and never know what to make him. Moroccan breakfasts always consist of many components and i'm not particularly good at making them yet :( I'll serve him this with some eggs and bread and i'm sure he'll be happy. Thanks Huda xx

      I hope he'll like them , for me, i just LOVE them .. i would eat the whole pan u see here :-D Loooooooooooooollll .. by the way, i\m an egg girl as well :-D .. cz i don't eat cheese, which is a main thing for breakfast in our countries.. we make next to this one also : some scarmbled eggs or omlette, some french fries, some cheese, some jam, oilive oil and thyme.. it's a feast :-D love it actualy :-D
