Ginger Bread Men


These look awesome at Christmas Time, as decorations on a tree, left for Santa on Christmas Eve or as a treat to make with the kids getting into the spirit of Christmas!

Ingredients

  • 125g butter
  • 1/2 Cup brown sugar
  • 1/2 Cup golden syrup
  • 1 egg yolk
  • 2 1/2 Cup plain flour
  • 1 TBLSPN ground ginger
  • 1 teaspoon bicarb soda
  • 1 egg white
  • 1 1/2 Cup icing sugar
  • Assorted food colours

Method

  1. Preheat oven to 180 degrees and line two trays with baking paper
  2. Cream butter and sugar in small bowl with electric beaters until light and fluffy
  3. Add egg yolk and syrup beating thoroughly
  4. Transfer mixture to large bowl. Add sifted dry ingredients in two batches
  5. Press mixture into a ball and knead on a lightly floured surface until smooth
  6. Refrigerate, covered if possible for 15 minutes
  7. Roll between two sheets of grease proof paper to 5mm thickness
  8. Cut into shapes using cutters
  9. Place them about 3cm apart
  10. Bake for 10 minutes or until lightly browned
  11. Cool on trays
  12. Whisk egg white in a small bowl until foamy
  13. Gradually add icing sugar one teaspoon at a time
  14. Colour as desired
  15. Place icing in piping bags and decorate as desired
