Chicken Satay Sticks


veeeeeery yummy as a quick dinner that can be done in advance.

Serves 2

Ingredients

  • 1 tablespoon fresh coriander leaves
  • 100g steak
  • 2 chicken thigh filets
  • 1/3 cup rice
  • 2 green onions
  • 1 small carrot
  • 1 small zucchini
  • sauce
  • 2 teaspoons soy sauce
  • 2 tablespoon lemon juice
  • 1 tablespoon sweet chilli sauce
  • 1 onion
  • 1/3 cup peanut butter
  • 150g can coconut cream
  • 1/4t garam masala

Method

  1. Cut chicken into long, thin strips
  2. Put chicken into a bowl and add 2 teaspoons of soy sauce and stir until coated
  3. Sauté onions in fry pan
  4. Add remaining ingredients, mixing well between each addition
  5. Mix 1 teaspoon of peanut butter into chicken bowl
  6. Thread the chicken onto skewers
  7. Grill for three minutes on each side.
  8. Peel the zucchini and carrots into strips
  9. Serve skewers on rice with the vegetables
  10. Present with Sate sauce

Notes & Tips

you dont have to make the chicken on sticks, I have found it is as equally yummy when served with breast fillets; just marinate the chicken and cook as steps entail.

    I LOVED chicken satay when i first tried it .. i took then the recipe from mhy friend then, she's from thailand, and made it as she told me .. it was WWAAAAAAAAAAAWWW.. one day i'll post it to try .. this ones looks really tasty as well .. I'll give it a try one day( mayb with some changes, cz that's me :-D ) thanks Laura :-)
