Fish Fillet with Pesto cream sauce

Nice piece of Salmon Fillet, cooked with little Extra virgin olive oil and butter, on a bed of creamy mashed potatoes and topped with delicious pesto cream sauce. I really can't remeber how I made this recipe, I just remember that I was back from work and so hungry, and had got this nice piece of Salmon, so I decided to prepare it for my dinner that day.. and the result was soooooo yummy ...

Serves 2 to 3

Ingredients

  • ½ kg fish fillet (i used salmon fish)
  • Olive oil (for cooking fish and sauce) (i use extra virgin olive oil)
  • butter (for cooking fish)
  • ***for marinate:
  • ½ cup lemon juice
  • 1 tsp dried tarragon
  • 1 tbsp dijon mustard
  • ½ tsp black pepper
  • 1 tsp salt
  • ***for sauce:
  • 4 spring onions (basul akhdur)
  • 3 cloves garlic, finely chopped
  • 1 tbsp pesto paste
  • 1 cup whipping cream
  • 1 tin (170gm) thick cream (qeshta)
  • 1 cube chicken stock (like maggie)
  • *** mashed potatoes to serve with.

Method

  1. First, rinse fish pieces with water. Place in a deep plate and add marinate ingredients. Cover and leave to marinate for at least ½ hr.
  2. Meanwhile, prepare sauce: add some olive oil (about 3 tbsp) in a sauce pan, heat, then add garlic and stir for 2-3 minutes. Add spring onions and stir for just 1 minute not more. Add pesto paste then add chicken stock. Stir for a minute then add cream and whipping cream. Bring to boil. reduce heat and simmer for 3 inutes. Season with salt and pepper if needed.
  3. In a wide frying pan, add 3 tbsp olive oil + 2 tbsp butter. Heat and then add fish. Cook on each side for about 5 minutes until golden and done.
  4. For serving: place some mashed potatoes in serving plate, top it with a piece of fish fillet, drizzle with pesto cream sauce and serve.
