Corn Salad with walnuts& raisins

Great& easy salad to prepare a head. Garnish just before serving. Can be served at any time.


  • ***for salad:

  • 1 cup cherry tomatoes

  • 2 cup fresh mushrooms, sliced

  • 4 (420gm) cans sweet corn kernels

  • 1 medium red onion, chopped

  • ½ cup fresh basil leaves

  • 2 tsp dried basil

  • ***for dressing:

  • ¼ cup mayonnaise+ ¼ cup thick cream (in arabic: qeshta)+ ¼ cup extra virgin olive oil+ 1 tbsp lemon juice+ 2 tbsp white vinegar+ 1 clove garlic, crushed+ ½ tsp black pepper+ 1tsp salt

  • ***for garnishing:

  • ½ cup toasted walnuts

  • ½ cup toasted raisins


  • 1.

    Mix dressing ingredients together. Toss in salad ingredients. Add salt to season.

  • 2.

    Top with walnuts and raisins just before serving.


**Salad can be prepared in advance and keep in the fridge. Add the toppings (garnishing) just before serving.
**If you're having a BBQ day, you can grill some corn cobs, shred them and add instead of canned ones.
