Moroccan Cinnamon - rubbed leg of lamb


Very Very simple with great flavours. A fabulous inexpensive dish which alows you to be sociable as not much time in the kitchen needed.

Serves 4

Ingredients

  • One 2k boneless leg of lamb.
  • 2tbsp honey
  • 2tsp ground cumin
  • 1 1/2 tsp ground black pepper
  • 1 tbs ground cinnamon
  • 2 tsp salt

Method

  1. Preheat oven to 200 or 400f.
  2. Place a rack on the bottom of roasting pan large enough to fit lamb.
  3. Rinse lamb and pat dry.
  4. Rub honey ovr entire surface, then combine spices and salt and pat into honey.
  5. Let it sit at room temperature for 30 mins.
  6. Roast 1 hour or until medium rare.
  7. Remove from oven and allow to sit 15 minutes before slicing.
  8. Serve with cous cous
