Crostini with Wild Mushrooms and Mozzarella

An elegant and delicious first course, these rich tasting crostini also make a lovely light lunch or super.


  • 2tbsp extra virgin olive oil

  • 2 garlic cloves, chopped

  • 1lb buton or wils mushrooms

  • 1/4 cup of white wine

  • 1/2 tsp salt

  • 1/4tsp freshly ground black pepper

  • 24 small (1/2 inch thick) slices of country style bread such as ciabatta - toasted

  • 1lb fresh salted buffalo mozzarella cut into 24 slices

  • 2tbsp chopped fresh parsley


  • 1.

    Preheat oven to 190 or 375f.

  • 2.

    In a non stick pan heat the olive oil over a medium to high heat.

  • 3.

    Saute garlic for about 30 seconds.

  • 4.

    Add chopped mushrooms and saute for 3 to 4 minutes.

  • 5.

    Pour in wine and increase heat to high and cook, stirring,until liquid evaporates, about 5 minutes.

  • 6.

    Mix in salt and pepper.

  • 7.

    Arrange bread on a large baking tray.

  • 8.

    Tope each piece with mozzarella.

  • 9.

    Bake 5 to 7 minutes, until cheese is melted.

  • 10.

    Top crostini with mushrooms and sprinkle with parsley.

  • 11.

    Serve warm.


Great with a very cold glass of wine! and exceptionallyquick and easy to do for large or smal numbers.
