Black Cherry Yogurt muffins

Black Cherry Yogurt muffins

Hint: Best eaten on day of baking.

Serves 15

Ingredients

  • 1 cup (150g) white self-raising plain flour
  • 1 cup (150g) wholemeal plain flour
  • 1 ½ teaspoons baking powder
  • ¾ cup (170g) caster sugar
  • 200g tub nestlé diet black cherry yogurt
  • 2 eggs
  • ⅓ cup (75ml) canola oil
  • 125g canned stoneless black cherries, drained and halved

Method

  1. Preheat the oven to 180º C. Grease a ⅓ cup muffin tin. Combine the flours, baking powder and sugar in a large bowl. Combine the Nestlé DIET Black Cherry Yogurt, eggs and oil in a small bowl, whisk until combined. Stir into the flour mixture. Add the cherries and gently stir in with about 4 strokes.
  2. Spoon mixture into the muffin tin. Bake for 25 minutes or until lightly browned. Turn onto a wire rack and serve warm or cool.
