a crumbed mashed potato log with a centre of gooey mozzarella cheese
everyone loves them
Boil or steam your potatoes till soft and cooked throughly
DRAIN VERY WELL
Mash together with butter cream grated cheese salt and pepper and egg yolk
Mash well and then add the finely chopped onions
Cool the mix divide into 12
Once cool wet your hands and take a portion of the mix
Flatten slightly in your hand and place a mozzarella stick inside, enclose the cheese with potato and then crumb, flour, then egg then breadcrumbs.
Set aside on a plate and repeat with remaining croquettes to make 12
Heat oil in a saucepan (small to medium)
And fry a couple at a time till golden
if you like you can try it out with a stronger hard cheese but i use the mozzarella as its melts excellently but also keeps a great shape inside and dosent seep out while frying.
ALSO a pre brought breadcrumb coating like the herb and garlic one avail at woolies works great too
great with a tomato chutney (or HUNGRY GIRLS chilli jam) or as a side in place of potato in a classic dinner.
awesome with a small slice of thin ham wrapped around the mozzarella before wrapping in potato
