Banana Cupcakes

Yummy little cupcakes, great narna flavour

Serves 24

Ingredients

Method

  1. preheat oven to 180C
  2. line 2 12 hole muffin pans with patty cases
  3. beat butter, brown sugar together til light and fluffy
  4. add eggs and beat well
  5. sift the flour and spice
  6. fold into the butter mix
  7. and add sour cream and banana
  8. divide between cases filling 3/4 full
  9. bake for 20-25 mins till cooked
  10. cool in pan 5 mins and then on a cooling rack
  11. icing------------------
  12. beat extra butter, icing sugar and lemon with beaters til smooth and creamy and spread on compleatly cooled cupcakes.

the more ripe the bananas the better. decorate with handmade fondant mini bananas. or banana chips.
