SOOOO fed up of not getting the Carbonara RIGHT in Italian Restaurants i make it to this recipe, it really annoys me when i gear up for a creamy and RICH pasta and get some packet slop, ive sent it back many times, probably to the "chefs" horror but SORRY he obviously had NO TASTE BUDS UGH!!!!
Heat oil and butter
Add bacon, onion and garlic and cook well till fairly browned
Add some salt at this stage, 2 pinches.
In a bowl mix the cream the eggs and the parmesan cheese, garlic powder, onion powder pepper (pinch) and a little more salt set aside....
Cook your pasta in boiling water then drain and toss through a knob of butter
Once the pasta has a butter coating, add it to the bacon pan and then add the cream mix
toss over a medium heat continuously for a couple of minutes untill you feel the eggs have mainly cooked, BUT DONT OVER DO IT it will be scrambled egg pasta and thats just wrong!, add some extra parmesan, toss and serve
this kicks ASS on ANY packet mix thing that i almost ate at PANAROTTIS gross!!!!.......
