Chef Shez Special Caesar Salad

A Caesar salad has romaine lettuce and croutons dressed with parmesan cheese, lemon juice, olive oil and black pepper.

Ingredients

  • Ingredients:

  • • 1 head of romaine lettuce

  • • 1/2 bunch ice berg

  • • 4 herb & garlic flavour croutons

  • • 3 no Feta stuffed crumbed colossal olive

  • • 4 no kalamata olive

  • • Parmesan shavings

  • • 3 no oven roasted cherry tomatoes

  • • 3-4 slice red & yellow pepper

  • For dressing

  • • 3 no caper

  • • 1 clove roasted garlic, cut in half

  • • 1-1/2 tablespoons lemon juice

  • • 8 tablespoons olive oil

  • • 1 teaspoon Dijon mustard

  • • 1 egg yolk

  • • 3 tablespoons freshly grated Parmesan cheese

  • • 2-3 sprig of flat parsley

  • • Freshly ground black pepper to taste

  • • Seasoning

Method

  • 1.

    Preparation

  • 2.

    • Take a salad bowl{deep bowl}, put one spoon of dressing. add little bit of lime, juice check the seasoning and then put the leaves in the deep bowl and mix with gentle hands.

  • 3.

    • Deep fry 3 feta stuffed colossal olives and put on a kitchen towel to soak the excess of oil.

  • 4.

    • Put the leaves in the serving plate.

  • 5.

    • Add the three fried olives, 4 kalamata olives, oven roasted cherry tomatoes, garlic croutons.and peppers

  • 6.

    • Sprinkle grated parmesan cheese on top of it and garnish with parmesan shavings.
