Val's Low Cal Potato Salad


This is a very yummy potato salad,made very quickly and tastes delicious

Serves 8 to 10

Ingredients

Method

  1. Peel and dice the potatoes,cook covered in the microwave for 9 mins,place in a colander and run under cold water to remove starch and to cool.Place in a large bowl,add chopped eggs and finely sliced shallots,Mix together the sour cream and mayonaisse,pour over the other ingredients and mix well.Place into a serving dish,cover and refridgerate until needed,when ready,watch it disappear.I've been asked for my recipe so many times that I will share with every one,enjoy.

Fresh Parsley and /or bacon bits can be added,but really doesn't need it
