Bamya bel Zait (Okra with Olive oil)

This is one of the easiest and tastiest recipes you could prepare with okra. Can even be prepared ahead and heated before serving.

Ingredients

  • 1/2 kg small okra (can use frozen)
  • 1/2 kg tomatoes , diced medium size
  • 5 cloves garlic, finely chopped
  • 2 medium onions, sliced julian
  • 1 green bell pepper, diced medium size
  • 1 green chilli pepper whole
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon allspice+ 1 tsp paprika
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • Salt& pepper to season

Method

  1. Wash fresh Okra, keep in open air or sun to dry, and then cut to remove the head. If using frozen, no need for this step.
  2. Mix all ingredients together in an oven dish. Cover with foil paper and place in 400F (200C) preheated oven for about 45-60 minutes.
  3. Serve hot or warm with some Arabic bread or rice, or maybe with BBQ.

    This was DELICIOUS!! My husband and I ate the whole lot with mountains of bread last night for our dinner. Thankyou Huda for this recipe xxx I'm definitely going to keep frozen okra on standby ready to make this at any given opportunity. I think it'll make a nice lunch for a group of friends to share too. :)

      oooo.. I'm so happy to hear so .. for me as i told u , it's one of my favourites and i as well eat it all :-D I've made it once for my friends and they loved it as well.. and the nice thing that as u said, u just keep some frozen Okra in ur freezer, so u can make it any time , and need no time to prepare or cook .. and the fresult is sooo tasty.. so happy that u liked it .. thanks dear :-)
