1 Cup Fruity Extra Virgin Olive Oil
Zest of 3 - 4 Lemon yellow part only
3 Garlic Cloves Roughly cut
1 bunch Thyme or Oregano
Sea salt and Cracked Black pepper to taste
Mix everything together in a bowl and pour over your chicken / spatchcock / lobster.
Moscato, Sparkling Whites and Sparkling Rose are the best wines to pair with Lemon & thyme marinade.
