Aamal's Pasta (a must-try pasta)

Every now and then, my friends and I gather at one of our houses, and each prepares a dish, so my friend, Aamal, prepares this so delicious pasta ( actually her cook prepares it :-) ) and every time we gather, we ask her to bring us this pasta.. It has some bahraini spice,"called "daqqous" , but the recipe is not bahraini, but it tastes soo good.. we call it now "Aamal's pasta :-)

Serves 5 to 6

Ingredients

  • 350gm pipe rigatei pasta
  • 500ml sour cream
  • 1 glass ( 240ml ) white cream cheese (like puck or al-mara3i)
  • 1 onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 250gm boneless chicken, cooked& cut in medium size pieces
  • 1 can mushroom (or fresh mushroom)
  • 200gm frozen whole leaf spinach (or 500-600gm fresh spinach)
  • Salt& black pepper (to season)
  • 1/2-1 cup chicken stock
  • 1 tablespoon daqqous powder (home-made bahraini spices, mix of coriander, cumin,garlic powder,salt& allot of red chilli powder)
  • Olive oil & butter
  • 200gm mozzarella cheese, grated

Method

  1. Prepare pasta as directed on the package
  2. Mean while, In a pot, sauté the onions & the garlic in some olive oil & butter till translucent.
  3. Add mushroom and stir.
  4. Add spinach and stir.
  5. Add sour cream and cream cheese.
  6. Add the salt, pepper and daqqous.
  7. When the mixture boils, add the pasta ( add 3/4th and see if need to add more ) and chicken. Add chicken stock to get a thick sauce (add extra stock if needed).
  8. Transfer pasta mix to a baking dish. Top it with Mozzarella cheese.
  9. Bake in preheated oven on 240C degree for about 10-15 minutes till it boils all together and top becomes golden.

Notes & Tips

You can prepare it even without the chicken If you lik,e or add extra chicken if you like more meat in it .. so it's up to you. If you have any chicken left overs, you can immediatelly prepare this pasta with no time at all.. I don't like sour cream allot, so I use 250ml sour cream and 250ml whipping cream, and about 2-3 tablespoons lemon juice.

      Sally dear .. soo happy that u loved it and that it turned out as u tasted it when i did :) .. Its an easy recipe that anyone can make and very tasty at the same time, thats y i alway recommend it and wrote :" a must- try" pasta recipe! ;)

    Huda, thank you for sharing your recipes. Would you mind sharing your spice blend recipe for the Daqqous powder. I would like to make this myself but am unsure of the quantities of each ingredient. Many thanks.

      Hi Sue..so sorry for the late reply!! the issue that we dont get notifications if there is any comment on any of the recipes pages!! Anyways.. What i know about daqqous that its a combination of garlic powder+coriander+cumin+chilli powder ..i guess some paprika as well.. the garluc is strong in it..as for the chilli, usually this mix is spicy,.so if u will prepare it at home, u can add the xhilli quantity as u feel its good for u.. but its a hot spice mix in general ..

    I've checked the cheese at the supermarket, mayb u can use mascarpone instead.. do u have kraft or Kiri products there in Australia ???

    I'll pass by the super market and check both and see the difference, usually we use Kiri cheese instaed of Philadelphia and Puck instead of MAscarpone but i'll go check and come back to u ..

    sounds nice but im in australia and i am just wondering what i can subsitute for 1 glass ( 240ml ) white cream cheese (like Pock or Al-Mara3i) ..is this similar to philidephea chees spread? Also Daqqous powder , can you please tell how to make this spice?

      And regarding Daqqous, as u can see in the ingredients, i wrote whats is it . It consist of cumin+ coriander+ garlic powder+ salt + allot of red Chilli powder It's a hot spicy mix of spices.. when u prepare it, the color of the mix should be red, cz of red chillli ..

      Hi abir..it's a danish cheese product.. it is cheese spead, usually comes in a glass continer, many brands are there: Puck, Kraft, Keri (in cup, not the square one) . tastes little different than Phildelphea (which is similar to kiri cheese squares ) i\ve searched arround and founf out that u might find it in middle eastern shop, mayb they get this danish product .. Do u have any Kraft product ?????
