Philly Spinach Cob


Simple, versatile recipe, great for parties or a small get together treat!

Serves 4 to 10

Ingredients

  • 1 tub philly cheese
  • 3-4 tbs sour cream
  • 3 tbs mayonnaise
  • 250 g frozen spinach, thawed (water squeezed out)
  • 3 spring onions, sliced
  • 2 sachets coles smart buy spring veg soup mix
  • 1 fresh cob

Method

  1. In a medium bowl, mix together philly cheese, sour cream and mayonnaise. Add thawed spinach, spring onions and soup mix
  2. For ideal taste, leave overnight for ingredients to flavour, otherwise for at least an hour
  3. Preheat oven to 180'C
  4. Microwave spinach mixture on high for 1 min to warm, mix thoroughly
  5. Cut circle around the top of the cob and scoop out bread leaving 2cm layer inside, break leftover bread into bite size pieces
  6. Place cob on foil lined tray with smaller pieces arranged evenly around cob.
  7. Add spinach mixture, then bake in oven for approx 10 - 15 mins, or until cob is golden and crunchy
  8. Serve and enjoy:-)
