Take half a cup of brown sugar and place in a medium pan with a splash of water on moderate heat until it bubbles
Add ¼ of a stick of butter and allow to mix with the sugar
Add one cup of whipped cream and mix in to make butterscotch. Allow to simmer
In a separate bowl crack 12 eggs and beat moderately (do not let them get fluffy). Pour the eggs into the pan of butterscotch and keep on moderate heat, mixing slowly so it thickens. Remove from the stove and set aside
Grease baking tray
Slice the bread rolls and pack them into the tray. Pour the butterscotch over so the bread is evenly soaked
Add raisins and sultanas (if you wish you can pre-soak the sultanas and raisins in whisky)
Bake at 180 degrees for 30 minutes or until brown
Make the sauce by moderately whisking 3 eggs with two tablespoons of white sugar. Once mixed, add one cup of milk.
Crack open a vanilla bean and place the seeds in the mixture. Put over a low heat and stir occasionally until thickened.
Remove the pudding from the oven and serve with sauce over the top.
Mmm, sounds nearly like nana used to make?
