Sticky Date Pudding with Caramelised Strawberries, Flambéed in Grand Marnier and served with Cream

Alex’s dessert recipe from Come Dine With Me Australia, series 1.

Serves 4

Ingredients

  • 1/1/2 pitted dates
  • 1/1/4 water + 1 tsp bicarbonate soda
  • 90g butter
  • 1 cup brown sugar
  • 2 eggs
  • 1/1/4 self raising flour 1 tsp golden syrup
  • 2 punnets of strawberries
  • 1/4 cup of grand mariner, sauce 200g butter
  • 1 cup brown sugar
  • 300mls thickened cream

Method

  1. Combine dates and water, simmer for 5 minutes together with bicarbonate soda until soft.
  2. Cream butter and sugar, then add eggs, date mixture and flour
  3. Put in oven at 180 degree for 20 minutes or until cook.
  4. For the sauce, add the butter and sugar with the strawberries and cook for 1 minute and the add the grand mariner and flambé until strawberries are rich in colour
  5. Add cream and serve warm.
