Chicken with Tarragon Sauce, served on a Bed of Couscous with Roasted Fennel and Sweet Potato

Alex’s main course recipe from Come Dine With Me Australia, series 1.

Serves 4

Ingredients

  • 5 chicken breasts
  • Garlic
  • Oil
  • ½ cup stock
  • Salt & Pepper to taste
  • 300ml cream
  • Worcestershire Sauce
  • Dried Tarragon Leaves
  • Fennel
  • Sweet Potatoes

Method

  1. Fry the chicken on both sides with oil and garlic. After browning, remove from the pan and put into a covered baking dish. Cook until tender
  2. Add more garlic to the fry pan and add ½ cup of stock, cream, a dash of Worcestershire sauce, salt, pepper and tarragon leaves. Stir until thick.
  3. Once the chicken is cooked, add the sauce and serve with roasted fennel and sweet potato.
