Creamy Potato and Leek Soup served with Crusty Olive Bread

Alex’s entree recipe from Come Dine With Me Australia, series 1.

Serves 4

Ingredients

  • 5 chopped potatoes
  • 1 bunch of chopped leeks
  • Garlic
  • Butter
  • Oil
  • Chicken stock
  • Salt and pepper
  • Cream, parsley
  • Mint
  • Chives

Method

  1. Sweet the chopped leeks in butter and oil and allow to cook for 1 minute
  2. Add the chopped potatoes and stock and bring to boil, simmer until the potato and leeks are soft then puree all the ingredients using a food processor.
  3. Pass the soup through a strainer, reheat and adjust seasoning and consistency as required
  4. Serve warm with cream and herbs.
