Banoffee Pie

Anne-Maree's dessert recipe from Come Dine With Me Australia, series 1.

Serves 4

Ingredients

Method

  1. Make the biscuit base by crumbing the biscuits in a food processor. Add 125g of melted butter and process until well combined. Press into a round spring-form tin to half way up the side of the tin. Chill in the fridge for about an hour.
  2. Make the caramel filling by combining 1 can of condensed milk, 1/3 cup of brown sugar and 50g butter into a saucepan. Stir over low heat constantly with a wooden spoon until the caramel thickens. Pour the caramel onto the biscuit base and cover with plastic wrap. Return to the fridge to chill.
  3. Slice the bananas and arrange on top of the chilled pie covering the whole surface. Top with whipped cream. Top with whipped cream and refrigerate until required.

    This is the first time I've seen these comments so thank you everyone. I'm having a dinner party tomorrow night and I am recreating my CDWM menu. I have no doubt that my banoffee pie will be great this time. I've made it a few times since the show and it's been fine. I know I didn't thicken the condensed milk on the day because of the cameras and the pressure. I think the fact that it was a flop added to the hilarity of the night. It was meant to happen but wouldn't I love to have another go!!!

    Bannoffee Pie sounds a lot like my "home versiion" of Choc/Caramel Slice where I ALWAYS OMIT the Mellted Chocolate topping cos it's soo rich. LOVE LOVE LOVE YOURE RECIPE. I've had flops with mine in the past too. It''s one of those recipes where it always turns out better the second time around, cos you're familiar with what you're doing then. Thanks Anne-Marie.

    What a trouper when her dessert flopped. We've all had our share of kitchen disasters. When I make Banofee Pie I use the Nestle tinned caramel. So much easier and nice and thick already. Butternut bikkies make an awesome biscuit base.

    Digestive biscuits make a much better base, as per the Nestle website. I make this all the time, its so easy.

    I felt so sorry for you Anne-Maree when the Banoffee Pie flopped. I am going to give it a go anyway. You were just rushed and didnt thicken the caramel enough. Great that the other guests enjoyed it anyway - even the 'wanabe snobs'.

    Given that Nestlé have the condensed milk and caramel side by side on the shelves at supermarkets, makes one wonder why there was a 'slip-up'.... I've got The Hungry Monk's recipe for banoffee on my page, not too dissimilar to yours Cooking Mama. ;-) (The Hungry Monk was the first to introduce Banoffee Pie to the world...)

    It's a pity the recipe failed. Looking at the process, I think the caramel wasn't cooked enough and that is why it didn't set. I loved the fact you could laugh at yourself and the fact that your guests still loved the desert has made me want to try it.
