Rocket, Pear and Parmesan Salad with a Lemon Dressing

Serves 4

Ingredients

  • 300 g Wild Rocket Or Normal Rocket
  • 1 Pear Sliced thinly - core removed
  • 80 g Parmesan Shaved
  • Juice of 1 Lemon
  • 3 tablespoons Olive Oil
  • Salt & Pepper

Method

  1. Wash the rocket leaves gently and drain
  2. Place into a mixing and bowl
  3. Add in the pear slices, salt, pepper, lemon juice and oil.
  4. Mix gently so as not to bruise the leaves.
  5. Place into a serving bowl and place the Parmesan over the top

    love this recipe... it is a great side salad on a winter day... refreshing..

    I make this for my fiancee every few days whilst we have dinner, and she absolutely loves it. Great simple recipe, used as a side for lamb or a nice peice of rump.
