Red Jewelled Snow and Biscotti

Trudi’s dessert recipe from Come Dine With Me Australia, series 1.

Serves 4

Ingredients

  • 2 Pomegranates
  • 30 ml Thickened Cream
  • Store bought Meringue

Method

  1. De-seed Pomegranates by hitting the back of the fruit so the red jewelled seeds fall out. Put aside.
  2. Whip thickened cream and put in fridge.
  3. When serving, crumble meringue through whipped cream, spoon into bowls and crumble more meringue over the top and decorate with pomegranate seeds. Serve with Biscotti.
