Wasabi Mayo Poached egg Salad

With summer approaching, salad is the best way to go, for me anyway. Lately I’m investing different types of salads with different combinations and different dressings. Really~~ there are so many that can be created with just a little twist, all yummy with beautiful summery colours. A good salad makes a good day, let the salad adventure begin!

Ingredients

Method

  1. Poach egg and leave aside for later use.
  2. Cut up tomato and cucumber in cubes. (you can de-seed cucumber if don’t like cucumber seed).
  3. Wash and break up the Greek oak lettuce and butter nut lettuce.
  4. For wasabi mayo, mix wasabi and mayonnaise in the ratio of 1:2. (i.e 1 part of wasabi to 2 parts of mayonnaise) mix well so there is no wasabi bits.
  5. Mix cubed tomato, cucumber and broken up lettuce well with some wasabi mayo.
  6. Place some mixed salad in the middle of the plate, carefully drop poached egg in the centre of the salad, squeeze some more wasabi mayo on the top, and sprinkle 7 spices and black sesame seeds.

Notes & Tips

If you like lighter wasabi flavour in your salad, make the wasabi mayo 1:3 when you’re making it!
