Banana Bread With Mascarpone spread


  • Mascarpone Spread


  • 1.

    Preheat Oven to 170 deg cel or fan forced 150 deg cel

  • 2.

    Grease and line loaf tin

  • 3.

    In large bowl mash Banana add sugar mix well

  • 4.

    Lightly beat eggs then add to banana mixture

  • 5.

    Add milk and olive oil and mix well

  • 6.

    Add flour and cinnamon and mix untill totally combined

  • 7.

    Pour into loaf tin and bake until skewer come out clean and top in golden brown approx 45-50 mins. (times can vary)

  • Mascarpone Spread:

  • 1.

    In bowl combine cheese maple and nut meg whip until smooth and creamy


This will keep in the fridge for upto 5 days. I like the toast the banana bread then serve with marscapone spread and fresh mint. I love this on christmas moring, light enough to then consume a big lunch. Enjoy
