Ham and vegetable fritata


Easy to put together a quick one for a weeknight- eggs with ham and vegies whipped up and cooked in a pan.

Serves 4

Ingredients

Method

  1. Beat eggs in large bowl and beat in cream, milk and sour cream. Add salt, pepper and herbs.
  2. In a large pan heat the olive oil and cook the onion and ham.
  3. When onions are soft, add the vegetable mix to cook before adding well beaten egg mix.
  4. Spread the grated cheese over the top.
  5. Allow to cook at a moderate temp. until egg is cooked.
  6. You can brown the fritata in the oven if desired.
