Tomato Salad with Cottage Cheese and Mint

It's been a really lazy day and I haven't left the house all day. I don't know what's the matter with me . . . maybe it's that time of the month already! I'm too lazy to go out to eat. What's my excuse this time? Town's just too far away. But I've got to feed myself. Rifling through the fridge, all I can find is some cottage cheese and a tomato . . . and there's a stick of baguette in the bread bin. Guess I'm going to be eating healthily tonight! You don't need a big steak or a fish fillet to make a meal. A bit of green and red is enough. Nowadays a lot of people are cooking for one and hate the effort to make every meal. So keep it simple and let the true flavours of your ingredients shine through. The most simple meal is often a salad and this one is really easy.

Serves 1

Ingredients

  • Ingredients (for one person)
  • 1 medium tomato chopped into chunks
  • 6 leaves of fresh mint, 4 finely chopped, 2 for garnish
  • 3 teaspoons olive oil
  • Freshly squeezed juice of 1/2 lemon
  • 3 teaspoons cottage cheese
  • Freshly ground salt and black pepper to taste

Method

  1. Chop the tomatoes and place to one side. Mix all the other ingredients together to make a hearty dressing. Season the dressing to taste with salt and pepper, then fold in the tomato chunks until they're well coated. Serve with warm, fresh baguette.

Notes & Tips

Tips : If you don't like mint, use a fresh herb of your choice, e.g. basil or dill.

    Yeah that so simple dish and easy made :P just browsed your page I was lived in Sydney last 3 years and work for Longrain! it is lovely place , so many beautiful food there :P

    I have this sort of thing for lunch usually - except I stick a small tin of Lemon Pepper tuna into it, substitute the mint for basil and have it on crackers - it's delish!
