Put the Rhubarb, vanilla pod and the Caster Sugar in a pan and put on a VERY low heat as you don’t want the sugar to burn. Let them simmer gently until the Rhubarb has become pulp like.
Put into a bowl and chill straight away. Once cooled, remove the vanilla pod, add 2/3 drops of almond extract (it is VERY strong so be careful), 1 teaspoon of lemon zest and 6 table spoons of Midera. Mix together well and put back in the fridge.
Whip the cream in a large bowl until stiff and chill.
Crush 3 Amaretti Biscuits into each serving dish. Gently fold the rhubarb mixture in the cream and when blended, spoon into the dishes on top of the biscuits. Place back in the fridge until you are ready to serve.
Wanted to have a go but then got confused! Ingredients say 2 tablespoons of Madeira but then the recipe says 6 tablespoons of Madeira?
