Place the fresh crab meat in a large mixing bowl. Very finely chop 4 spring onions, a handful of chives and mix well.
Add a good squeeze of fresh lemon juice, dash of Tabasco, salt and freshly ground black pepper to taste.
Be careful not to break up the chunks of crab too much when mixing in a couple of tablespoons of Mayonnaise and then spoon the mixture into ramakins and put back into the fridge.
When ready to serve, put the ramakins on a small plate and serve with Lavosh Crispbread and a slice of lemon to garnish.
You should have won Richard. All you recipes looked absolutely delicious. I am not a seafood eater but this recipe looks so yummy I think I will be converted!

Sounds gorgeous, I'm going to make it this weekend! Richard your recipes all look delish!
Sounds lovely, but I would serve it with a sumptuous toasted bread. otherwise it looks to much like a party dip. (Sorry Richard)
