Mexican guacamole with cilantro and home made antojitos mexicanos

Jennifer's entree recipe from Series 1 of Come Dine WIth Me Australia


  • Guacamole

  • Antojitos Mexicanos


  • Guacamole:

  • 1.

    Cut tomatoes, coriander, chillies & onion in very small pieces and add some salt.

  • 2.

    Add the avocados in little pieces to the rest of the ingredients and mix it

  • 3.

    If the Guacamole is going to be served after 1 hour, put avocado seeds on top of the mix and cover with the juice of ½ lemon. Add salt

  • Antojitos Mexicanos:

  • 1.

    Cut the onion in little pieces. Cut tortillas’ edges to form a circle of 6 cm diameter

  • 2.

    Fry the Spanish Chorizo in 1 tbs of oil

  • 3.

    Fry the tortillas in hot oil for 3 minutes or until lighter brown

  • 4.

    Spread the beans in the tortilla; add the fried chorizo, topping with cream, cheese and onion.

I made this and it was fabulous!!! :-) but I must say I was not impressed with Jennifier on the show :-(
