Yee-ha tomato and garlic prawns

Ben's entree from series one of Come Dine With Me Australia ...

Serves 4

Ingredients

  • 2 ½ tbsp oil
  • 1kg green prawns, peeled, leaving tails intact, deveined
  • 1 Spanish onion, finely chopped
  • 2 ½ cloves garlic, crushed
  • 2 birdseye chillies, deseeded, finely chopped
  • 3/4 cup white wine
  • 400ml Stock - Fish or vegetable
  • 400g can diced tomatoes
  • 1/2 cup chopped fresh parsley

Method

  1. Heat 1 tbsp of oil in a frying pan over medium-high heat. Add the prawns and cook for 1 minute or until seared. Remove and set aside
  2. Heat the remaining oil in a frying pan. Add onion, garlic and chilli. Cook until soft. Add wine and cook until it reduces
  3. Add the stock and tomatoes and bring to the boil. Reduce the heat and cook uncovered until sauce has thickened
  4. Stir in the prawns and parsley and serve with crusty bread

    The show after this another person cooked prawns in paella and they all commented on how tough the prawns in the paella were compared to these ones cooked for an hour. But I shall try and see how it turns out

    You would cook until reduced , then add prawns for a couple of minutes to just cook through other wise they would be as tough as rubber tires

    i think you would reduce the sauce(for above mentioned time) and the last couple of minutes add the prawns...

    prawns would be tough if cooked for an hour and a half?? wouldn't they

    I watched the show and was surprised to hear that he cooked the prawns for 1 1/2 hours, in my experience prawns are cooked for a few minutes - always. Cant imagine anything in that recipe that need 1 1/2 hours of cooking. The recipe as printed here is what I will try.

      Don't know if you saw the show last night Karen but I think he said he simmers them for about an 1hour. If you have Foxtel and watch the show it will be replayed on Saturday or Sunday - all 5 episdodes in fact. I can't wait to cook this recipe myself - YUM!
