Soy and Honey Glazed Ham


Serves 8

Ingredients

  • 8kg ham, bone in
  • 120ml soy sauce
  • 100ml water
  • 200g honey
  • 1 tsp chilli flakes
  • 1 tsp ground coriander
  • 1/2 tsp ground star anise
  • 10 cloves

Method

  1. Pre-heat oven to 170°C.
  2. Remove skin from ham, leaving fat layer intact. Score fat with a knife making a diamond pattern.
  3. Mix together soy, water, honey and spices and rub into ham. Push cloves into ham fat evenly spaced over ham. Place ham in a large baking tray bake in oven for 90 minutes. Baste with pan juices every 15 minutes.
