Super Easy Banana Bread


Have a couple of over ripe bananas lying around but don't like throwing them away? Here's a recipe for you!

Serves 4 to 6

Ingredients

Method

  1. Heat oven to 180. Grease loaf tin and line bottom. Get medium sized bowl and mash up bananas. Add honey, sugar, egg & vanilla and mix. Add flour, salt & cinnamon and mix. Pour mixture into tin, bake about 30 minutes until skewer comes out clean. Keep in tin to cool for ten minutes, then take out on rack to cool. Either serve warm or you can toast it later - great with Apricot Jam!

Notes & Tips

I also like to mix it up a bit with the spices and put chopped nuts through (walnuts, sunflower seeds etc). You could also add dried fruit or chocolate chips.
