Rachael's Lemon & Tarragon Buttered Roast Chicken


This is a recipe that adds a beautiful fresh flavour to roast chicken. It's quick and simple and only uses four ingrediants.

Ingredients

  • 1 chicken for roasting (i'm using a size 15)
  • Fresh or dried tarragon (preferably fresh)
  • 125 g butter (please use real butter as margarine is mostly water and doesn't have the same ommph)
  • 2 whole lemons

Method

  1. Zest and juice lemons, and mix with butter and tarragon.
  2. Remove gibbits from inside chicken and discard - (You could use these for a gravy to save on wastage.)
  3. Pat dry the chicken skin.
  4. Use your hands in between the skin and the flesh and create "holes"
  5. Spoon the lemon butter & tarragon mix into the holes you've created.
  6. When you've used all the butter, spread the butter through the chicken by kneading it like dough.
  7. Cook in a hot oven 180C and cook as usual.
