Rum and Coke Ribs

Have plenty of napkins on hand as you will definitely have sticky fingers!!! Oh and extra rum and coke for the chef

Ingredients

  • 2 racks of american style pork ribs

  • Marinade

  • 1 cup of rum

  • 2 cans coca cola

  • 300 ml tomato ketchup

  • tabasco sauce a good dash or two

  • 2 cloves of garlic

  • 4 tbls hoisin sauce

Method

  • 1.

    Mix all the marinade ingredients in a bowl then place ribs in baking dish and cover with marinade, cover with foil and refrigerate over night.

  • 2.

    The next day cover with foil and bake in oven at 160C (or on a BBQ with a hood) for 1 and 1/2 hours, turning ribs over oncec during the cooking.

  • 3.

    Remove ribs from marinade and place on hot a bbq grill for five minutes on each side to get a charred and caramelized flavor.

  • 4.

    Meanwhile reduce the marinade a little and pour over the caramelized ribs.

I used the recipe without alcohol and it was delicious.
Drank the rum instead.

Tried this with Scotch and although it worked the rum was much better. I found Bundy Rum to be the best for this receipe.

I used pepsi instead, didn't use rum and it still turned out good. It was delicious!

i discovered this recipe on the christmas special on fox....my other half thought it was easy enough to make and wow !! it was sooooooo delicious!! we made it twice! once for christmas eve..and then christmas dinner ... awesome recipe
